Gorgonzola Mac and Cheese
- 4 cups dry pasta
- 1/4 cup unsalted butter
- 2 tbsps salted butter
- 1/2 cup gorgonzola
- 3 cups milk
- 1/4 cup asiago
- 1/4 cup parmesan cheese
- salt and nutmeg to taste
- salt and pepper to taste
- Optional: roasted garlic cloves to taste
Melt butter in a pot at low heat.
Whisk in flour to make a smooth paste.
Slowly add milk, ensuring there are no lumps.
Continue to incorporate all the flour, stirring continuously.
Increase heat and continue to stir until liquid begins to boil.
Once boiling, remove from heat and add parmesan cheese, and seasonings.
Add roasted garlic, gorgonzola, and asiago to béchamel sauce.
Warm sauce and pour over cooked pasta and mix well.
