Celery Root Remoulade
- 1/2 cup Mayonnaise
- 1 tbsp Lemon Juice
- 1/2 Preserved Lemon coarsely chopped
- 1/8 tsp Truffle Oil
- 2 tbsps Fresh Cilantro coarsely chopped
- 1 1/2 lbs Celery Root peeled and shredded
Stir together first 5 ingredients (mayonnaise through fresh cilantro) until smooth, in a bowl large enough to hold the shredded celery root. Add celery root and toss to coat evenly. Serve.
